Is olive oil still as healthy when i fry my omelette's in it?

im lead to believe that all oil when heated turns to saturated fat, is this true.

No, it doesn't turn from monosatured to saturated fat, that would require a different chemical reaction and the addition of hydrogen.





However - olive oil is not the best choice for frying anything, it is not very stable at higher temperatures and breaks down quickly. It is true that heating olive oil, especially to the smoking point, reduces its health value.





You'll notice you never see anything deep fried in olive oil - it just can't take the heat.





My opinion is to make an omelet, just use a Teflon pan with a small amount of butter.Is olive oil still as healthy when i fry my omelette's in it?
No, it doesn't turn into saturated fat, but it does spoil if overheated.
