Olive oil vs butter for cooking?

I recently read that you shouldn't cook on the stovetop with olive oil and that it's better to use butter, b/c it doesn't break down as easily. I have been cooking with olive oil FOREVER. So, waht's wrong with cooking with olive oil ont he stove top? And what is the purpose of olive oil if not to cook with??? SO confused.Olive oil vs butter for cooking?
if you cook at really high temperatures with olive oil, it can burn and smoke. and apparently that breaks down the health benefits of the olive oil. but if you just cook at a moderate temperature, and don't have the pan screaming hot, you're fine. butter is not better. it is more flavorful for certain recipes, but not better.Olive oil vs butter for cooking?
Keep on using your olive oil. You can't deep fry with it, it breaks down at temperatures that high, but butter can't be used for that either. I find that you can heat olive oil someone higher than butter, just don't use it on top heat, use salad or vegetable oil instead.
I find that butter burns too easily and really doesn't last long at all. Besides, olive oil is much healthier to use than butter.
I use olive oil in a lot of my raw food dishes, so it can definitly be used for a lot other than cooking. Plus it's better for you than butter when it comes to cooking. I don't know aboutolive oil breaking down easier than butter, but millions of people use it to cook with and don't complain. I'd keep doing what you're doing.
butter burns easier. Stick with olive oil. Are you sure they were not telling you to not cook with expensive extra virgin olive oil? That should be use in salads and stuff, not cooked.
Nothing is wrong with cooking with olive oil or butter. Sometimes its a taste preference, or cooking method. I don't understand that either because the solids in butter burn easily, unless they are using clarified butter.
