I use canola oil when I cook. It is a natural substance and it tastes good.
It depends on what you're cooking, but often I just use a non-stick pan - then you don't need oil. I can cook omelets, quesadillas, or other things that don't necessarily need the oil.
Almost all oils have a significant amount of fat. Olive oil has good fats in it, though, so it's one of the better ones.
